Sushi Plus Flagship Store

This is Chicago’s first restaurant featuring robotic servers. This idea of automation to bring consistency, efficiency and a higher level of sanitation is the brainchild of noted rotary sushi operator Jason Choi.

The design concept is to integrate art and design with food delivery technologies. The major challenge that had to be overcome is incorporating interesting angles into the conveyor system with strict geometric requirements, coordinating clearances for the express delivery vehicles.

The resulting floor plan met the requirements for the automatic delivery of food, maximized the seating and create spaces for patrons to wait and view the many design elements such as glowing glass cubes, all energized by lightning bolts streaking across the ceiling and walls in a high energy, fast moving, environment filled with one-of-a-kind lighting, objects, and commissioned artworks.

The restaurant features 3 large scale reverse perspective paintings, a spiral booth and custom lighting all sourced overseas and assembled locally. A large, illuminated cube assembled from multiple pieces of laser etched crystal blocks forms the centerpiece of the restaurant at the entry to the restaurant and conceals the service bar.
